Abstract

Artocarpus altilis is one of the plants found in Indonesia, especially in Kalukubula Village, Sigi Regency.
The leaves of this breadfruit tree are usually used by the community as traditional medicine. In addition
to leaves, wood, roots, especially the fruit of breadfruit are widely used by the community as food. This
study aims to find out the phytochemical content of breadfruit leaves. The benefits of this research are
as information to readers and the public about the chemical content of fresh and dried breadfruit leaf
extract so that it can be used as a medicinal plant. This research was carried out from December 7,
2021 to February 28, 2022 at the Laboratory of the Department of Chemistry, Faculty of Mathematics
and Natural Sciences, Tadulako University. The method used in this study is a quaternative method,
where fresh and dried breadfruit leaf extract is tested phytochemicalally to determine the content of
flavonoid compounds, alkaloids, saponins, tannins, terpenoids, steroids and carotenoids. The results
showed that the water content of fresh breadfruit leaves was 8.16%. While the water content of dried
breadfruit leaves is 5.73%. The results of the phytochemical test analysis on fresh breadfruit leaf extract using 96% ethanol solvent, positively containing falvonoid compounds, saponins, tannins, terpenoids while on the leaves of positive dried breadfruit contain saponin, tannin, and terpenoid compounds. The results of phytochemical analysis contained in fresh breadfruit leaf extract and using positive n-hexane solvent contain steroid compounds and carotenoids. While on dried breadfruit leaves on solvent n-hexane positive contains carotenoid compounds.
